In each episode two chefs, representatives of as many Italian regions, compete in a double round. To judge them there are two starred chefs, Gennaro Esposito and Cristiano Tomei. Initially, in the first round, the two challenging chefs had to prepare one dish out of three possible choices of the home region

, chosen by the guest chef. At the end of preparation, the dishes were submitted to the judgment of the chefs who gave a score from 1 to 10. At the end of the first test, in the second leg the cook from the other region had to choose the dish of the challenging region and make his own revisiting.
